White broad bean seeds have a sweet, slightly fishy taste and a mild aroma (when roasted). They are slightly warm in nature and have cooling, heat-clearing, nourishing, detoxifying, and dampness-removing effects.

White hyacinth beans are a long-standing and popular crop in Vietnam, from the plains and midlands to the mountainous regions. People plant white hyacinth beans intercropped with corn so that when the corn is harvested, the corn stalks serve as a trellis for the hyacinth beans to climb.

It is a highly nutritious source of raw materials. White kidney beans contain 22.7% protein, including amino acids such as arginine, lysine, tryptophan, and tyrosine; 57% starch; 1.8% fat; vitamins A, B1, B2, and C; sugars; and digestive enzymes.

The main medicinal part of the white hyacinth bean is the seed, harvested in August-October during dry weather from mature, yellow-shelled pods. The seeds are then peeled, dried, or sun-dried. Good seeds should be large, plump, oval-shaped, pale white or ivory yellow, smooth and slightly glossy, sometimes with black dots, and have a white protrusion along the edge; they should be firm and solid; purple seeds (purple hyacinth beans) should not be used. When used, they can be taken orally or roasted until golden brown.

In traditional medicine and folk remedies, white hyacinth bean seeds, known as bạch biển đậu or bạch đậu, have a sweet, slightly fishy taste and a mild aroma (when roasted). They are slightly warm in nature and have cooling, heat-clearing, nourishing, detoxifying, and dampness-removing effects.

Cooling medicine

20g of roasted white kidney beans; 16g of basil leaves; 12g of Magnolia bark; decoct with 400ml of water until 100ml remains, drink in two doses daily. Treats colds, fever, vomiting, bloating, and diarrhea.

White kidney beans, watermelon rind, bamboo leaf ginseng rhizome, lotus leaves, 12g each, chopped, dried, and brewed into a decoction to drink once a day. Treats body heat, headache, dry throat, restlessness, and insomnia.

Nutritional supplements (especially good for children)

White kidney beans, Job's tears, Chinese yam, lotus seeds, Codonopsis pilosula, 100g each; nutmeg, malt, 30g each; cardamom, tangerine peel, 20g each. All ingredients are finely chopped, dried, and sieved into a fine powder. Mix with honey to form granules or pills. Take twice daily, 8-10g each time. Treats childhood malnutrition, emaciation, pale complexion, loss of appetite, prolonged digestive disorders, and irregular diarrhea.

White kidney beans, Job's tears, glutinous rice, 100g each; gac oil 10ml; syrup to taste. Roast the three types of beans until golden brown, grind them into a fine powder, sift the powder, then knead with gac oil and syrup to form a pliable, non-sticky dough. Roll it thinly, cut into cakes, and dry. Consume 25-50g daily, divided into 3 doses, before meals.

Children's nutritional supplements, which can be used as a substitute for multivitamins.

White kidney beans (roasted), hawthorn, malt, fermented wheat, Angelica sinensis, Poria cocos, 45g each; Chinese yam (roasted) 60g; Atractylodes macrocephala (roasted), tangerine peel, Quisqualis indica, 20g each; Coptis chinensis, licorice, 10g each. All ingredients are dried, powdered, sieved, and mixed with honey to form pills the size of green beans. Take 3-5g 2-3 times daily. This medicine strengthens the spleen and aids digestion, used for thin and weak children (Phì nhi hoàn - a traditional Chinese medicine for children with obesity).

In addition, white broad beans can be processed into a nutritious powder that is very good for children.

Antidote

In case of poisoning, for immediate first aid, you can crush 20g of raw white kidney bean seeds, add water, strain, and drink the mixture.

White bean (leaves or seeds) combined with starfruit leaves and betel leaves, 30-50g of each, used fresh, washed, crushed, and squeezed to extract the juice for drinking, cures mushroom poisoning.

White kidney beans, red Polygonum multiflorum, cinnamon twigs, Fritillaria bulb, 10g each; Pinellia ternata, Angelica dahurica, 6g each; realgar, pangolin scales, Poria cocos, 5g each. All ingredients are finely ground and soaked in half a liter of 90% alcohol and one liter of distilled water. When using, drink 5-10ml per day. This is "Hui Wine," a classic remedy for snakebites.

In addition to the above effects, a decoction made from 12g of white kidney beans, combined with 100g of centella asiatica; 8g each of cardamom, patchouli, cyperus, and plantain seeds; and 2g of ginger, can treat abdominal pain, bloating, diarrhea, and scanty urination. Alternatively, a decoction made from 8g of roasted white kidney beans, 8g of Syzygium aromaticum bark, and 6g of malt seeds, boiled in water and drunk daily instead of tea, can prevent diarrhea in children.

Dried white bean leaves and basil leaves, in equal amounts of about 8-10g, are boiled in water to treat sunstroke, fatigue, and thirst, especially after working in hot weather. 50g of fresh white bean leaves, washed, crushed, and squeezed to extract the juice, are mixed with the bile of one white duck and given twice a day to treat high fever and convulsions in children.
