Nấu quá kỹ

Áp dụng gượng ép theo các công thức nấu ăn chưa hẳn đã là chế biến rau củ đúng cách. Một trong những lỗi cơ bản khi vào bếp là chế biến thực phẩm ở nhiệt độ cao quá lâu. Điều này sẽ làm mất phần lớn các chất dinh dưỡng quan trọng. Luộc rau quá kỹ cũng khiến các vi chất dinh dưỡng như vitamin B và C bị hòa tan trong nước và thẩm thấu ra ngoài một cách lãng phí.

Nướng trên than

Mặc dù rất nhiều người yêu thích hương vị của các món nướng, nhưng rau củ được làm chín ở nhiệt độ quá nóng và khô có thể làm cạn kiệt các chất dinh dưỡng bên trong. Bỏ đi những bộ phận giàu dinh dưỡng
