Currently, the lằng tree is in its growth stage, with many young leaves, so people in the mountainous communes of Quỳnh Lưu, Yên Thành, and Nghĩa Đàn districts go to the forest to harvest the leaves, selling hundreds of kilograms of leaves to traders every day.
To distinguish fresh lằng leaves, buyers should look for leaves with serrated edges and dark red veins. Using fresh lằng leaves is better than using dried ones.
Fresh leaves, after being bought from the market, are washed, finely chopped, and cooked with herring, freshwater fish, minced pork, fresh shrimp, dried shrimp, etc.
Dried leaves can be used to make soup with vegetables such as amaranth and jute leaves. When the vegetables are cooked, add a pinch of the leaves (about 5-10g, depending on your preference for bitterness) and season to taste. Alternatively, dried leaves can be boiled in water, cooled, and consumed throughout the day like tea.

Dried lằng leaves are most effective when finely chopped and sun-dried. If the sun is too strong, they should only be dried for a few hours before being collected; drying them for too long will render them ineffective. To preserve lằng leaves for a long time, people usually dry them in the sun for a single day and then pack them in plastic bags. With this method, lằng leaves can be stored for several months.
