The eel fish is considered the most valuable fish in Western Nghe An. The fish has a long, slender, round body, a head with long whiskers, and few bones. This fish often lives in caves and nooks where the water flows strongly. Each kilogram of eel fish costs from 800,000 to 1 million VND depending on the weight. The bigger the fish, the higher the value.
To catch the fish, people have to use a hook or a spear to skewer the fish. The fish can be grilled, steamed with lemongrass, steamed with melon, braised in a clay pot... or cooked in vinegar soup.
