Ms. Nguyen Thi Hoa in Phong Tien village, Tien Thuy commune said that in the last months of the year, due to the good season of anchovies, her family bought a lot to process. To ensure the quality of the product, the fish must be fresh, and when processing, there must be a secret recipe so that when eaten, the fish has a spicy, salty and sweet taste that blends together. "Every day, the family hires 3 workers to process about 200 - 250 kg of dried anchovies. After cleaning the fresh anchovies, people use a knife to split the fish in half and dry them. According to people, dried anchovies are quite meticulous to process because they are small; before processing, they must be steamed until just cooked, then split in half with a knife. After 1 day of drying outdoors, the dried anchovies are collected and packaged; the selling price is from 120,000 - 130,000 VND/kg.
