When the weather is cold, choosing and preparing hot dishes is extremely important, as it not only nourishes the body, increases body heat, warms the spleen and stomach to combat the external weather, but also enhances the body's resistance and prevents illness.

Taking advantage of the weekend and having more time, we would like to introduce to our readers some medicinal dishes that nourish the body, boost vitality, and protect the skin from the cold, so that the whole family can enjoy them.

Ginseng hot pot:1kg of pork ribs, simmered to make broth for hot pot. 20g ginseng, 20g astragalus root, 3g peppercorns, 3g cloves. When the broth boils, skim off the foam, add the washed ginseng and the other herbs to the pot, and continue simmering for another hour to extract the sweetness from the bones and the nutrients from the ginseng and herbs into a broth for dipping various meats such as lamb, chicken, lean pork, shrimp, etc., and eat with herbs, broccoli stems, and your favorite vegetables.

Goat meat hot pot:500g goat bones, 1-2kg goat meat, 20g ginseng, 5g goji berries, 5g jujube, 3g coix seeds, 3g atractylodes, 10g shiitake mushrooms. Wash the goat bones thoroughly, blanch them briefly in boiling water to remove any unpleasant odor. Then, simmer them in water to make broth.

Wash the goat meat thoroughly, slice it thinly, and marinate it with a little ginger and wine for about 30 minutes to remove the gamey smell. Next, take the goat meat out, drain off the ginger and wine marinade, and put it back into the hot pot to continue simmering. Goat meat hot pot is served with vegetables such as cabbage, taro, lotus root, and fresh tofu.

Rooster hot pot:Clean one rooster, chop it into bite-sized pieces, and arrange the chicken meat on a plate. Put the head, neck, and feet of the rooster into a pot along with 500g of pork bones and simmer to make broth for the hot pot. Add 20g of ginseng, 10g of astragalus, 3g of licorice, 3g of jujube, 2g of ginkgo biloba, season with salt, pepper, fresh ginger, and rice wine to the hot pot broth and serve with mugwort, chrysanthemum greens, okra, and fresh mushrooms.

Besides ginseng hot pot, you can use some of the following medicinal dishes that are suitable for winter and are simple and easy to prepare:

Black fungus soup with goji berries:Wash 20g of white wood ear mushrooms and 30g of goji berries, then steam them with rock sugar and eat hot. (This is very suitable for people with respiratory illnesses or those with dry, cracked skin in winter).

Stewed fish maw:Large fish maws are cleaned and cooked until tender, then sliced ​​into strips. Ginger and seasonings are added to taste, and the mixture is simmered in a pot with other meats such as pork, beef, and goat. Serve hot.

Stewed pigeon:One pigeon, 20g each of Cynomorium, Dioscorea, and Lycium barbarum, simmered in water until tender. (This medicinal dish has warming properties; those with a hot constitution should not consume it.)

Steamed chicken with sticky rice:Clean the chicken, season it to taste, and simmer until cooked. Soak 500g of glutinous rice for about 3-4 hours until soft. Place the rice in a steamer basket, pour the chicken broth over it, and spread the cooked chicken on top. Cover and steam over high heat until boiling, then reduce the heat and simmer for about 50 minutes. Serve the chicken with the sticky rice.

Ginger porridge:60g of white rice. Wash the rice thoroughly and add enough water to cook it into porridge. Wash the fresh ginger and chop it into small pieces. When the porridge is cooked, add the ginger, season with spices, add chopped scallions, stir well and serve hot.

Carp and Red Bean Soup: 500g fresh carp, 100g red beans, tangerine peel, fresh ginger, to taste, cook into a soup, serve hot.
