Tips and tricks for preparing delicious meat dishes.
Before slaughtering the chicken, give it a spoonful of soy sauce or vinegar to drink; this will ensure the stewed chicken cooks very quickly and becomes tender.
1. Choose the meat.
* Beef
- For stir-fried dishes: use pork fillet or tenderloin. When stir-fried, the meat will be tender and not tough.
- For stews (beef stew, beef cooked in beer, etc.), choose cuts of meat with tendons such as beef shank, tendons, oxtail, beef thigh... the dish will taste better. When cooking beef stews, add ingredients like garlic, ginger, cinnamon bark, and cloves; the dish will be more fragrant, less greasy, and more nutritious.
- For grilled dishes: it's best to use fillet or brisket with a little fat, as they will be more flavorful when grilled.

* Pork
- Pork shoulder: suitable for boiling, slicing, or shredding for salads or stir-fried noodles because it is tender and low in fat.
- Front leg: Boil the whole leg for offerings or feasts. You can debone it, boil it, slice it into rounds, and wrap it in rice paper.
- Pork trotters: used for stewing with vegetables like papaya and lotus root. They can also be used in boiled dishes, soups, noodle dishes, and porridge...
- Back fat: used for frying to make cracklings and rendered fat, or added to braised meat, braised fish, etc.
- Pork tenderloin: suitable for preparing dishes for children and the elderly because the meat is tender and low in fat.
- Pork ribs: grilled is the best way to cook them. They can also be stewed, braised, or simmered in sauce.
- Pork belly: can be prepared in many different ways such as fried, braised, stir-fried, etc.
- Hind leg: suitable for braising in soy sauce or braising with bamboo shoots.

2. Wash the meat.
If meat gets slightly contaminated with gasoline or oil, to clean it and remove the smell, you should soak it in red tea for about 30 minutes before rinsing, draining, and cooking as usual. The gasoline or oil smell will then be gone from the meat.
Meat gets very dirty, and to clean it thoroughly, using warm rice water is faster. Washing with plain water takes a long time and is difficult because the dirt is tightly bound to the fat on the meat.
3. Stewing meat makes it tender quickly.
- Stewing chicken: Before slaughtering the chicken, give it a spoonful of soy sauce or vinegar to drink.
- Braised duck: Add a few snails to the braised duck; this will ensure even the oldest duck will become tender and soft.
