Meanwhile, Mr. Nguyen Minh Chung, Head of the Food Safety and Hygiene Department of Quang Ninh province, said that the National Institute of Food Safety and Hygiene Testing had sent an email with the test results of the samples of sausage and ham submitted by the Quang Ninh Provincial Food Safety and Hygiene Department. The email confirmed that the sausage samples no longer emitted light and no fluorescent substances were detected.
Mr. Chung affirmed that authorities are continuing to investigate the cause of the glowing pork sausage phenomenon and are strengthening measures to ensure food safety and hygiene in the locality.
In a discussion with Ms. Vu Thi Hang, M.Sc., from the Food Technology Department of the University of Agriculture I, she stated that the luminescence of food, specifically in Vietnamese pork sausage (gio lua), can be caused by several factors, including: contamination with bioluminescent microorganisms; the decomposition of animal proteins producing bioluminescent substances (from spoiled or rotten meat); or the presence of phosphorus in the food, which, under certain conditions, oxidizes and fluoresces. However, this luminescence is usually short-lived, and after chemical changes, it ceases. Nevertheless, consuming such food carries the risk of food poisoning.
On May 22nd, Mr. Do Van Tuan (from Cua Van fishing village, Ha Long city) discovered a piece of pork sausage he bought to use as fishing bait glowing in the night sky and called people nearby to come and see.
People were astonished when they witnessed the piece of pork sausage emitting a blue light in the pitch-black night at 1 AM. Suspecting it was coated with a fluorescent substance, the sausage was washed and chopped, but it continued to glow. Comparing it to a piece of pork sausage purchased elsewhere, it was found that this sausage did not glow under the same conditions.
