Meanwhile, Mr. Nguyen Minh Chung, Head of the Department of Food Safety and Hygiene of Quang Ninh province, said that the National Institute for Food Safety and Hygiene Control has emailed the test results of the ham and sausage samples sent by the Department of Food Safety and Hygiene of Quang Ninh province, confirming that the ham samples no longer glowed and no fluorescent substances were detected.
Mr. Chung affirmed that the authorities are continuing to investigate the cause of the glowing ham phenomenon and strengthen measures to ensure food hygiene and safety in the locality.
Talking to Master Vu Thi Hang, Faculty of Food Technology, University of Agriculture I, she said that the phenomenon of food luminescence, specifically in pork sausage, can be caused by a number of reasons, possibilities such as: food contaminated with luminescent microorganisms, due to the process of animal protein decomposition creating luminescent substances (spoiled, rotten animal meat) or food containing phosphorus, under certain conditions, this substance is oxidized and luminescent. But this luminescence phenomenon usually only occurs for a short time, then due to chemical changes, the luminescence phenomenon will no longer exist. However, if people eat these foods, they can be poisoned.
On May 22, Mr. Do Van Tuan (Cua Van fishing village, Ha Long city) discovered a piece of pork roll he bought to use as fishing bait glowing in the night sky and called people around to come and see.
When witnessing it, everyone was surprised when the ham glowed blue in the pitch-black darkness at 1am. Suspecting that it was covered with a fluorescent layer, the ham was washed and chopped but it still glowed. A piece of ham bought elsewhere was compared and found that this ham did not glow under similar conditions./.
