How to choose, store, and prepare asparagus.

There are three types of asparagus: green asparagus, white asparagus, and purple asparagus. These types of asparagus have similar nutritional value; however, white asparagus is considered the tastiest.

- You should choose bamboo shoots that are 15-20 cm long or shorter; avoid choosing longer shoots as they are likely old and of poor quality.

- Choose shoots that are still juicy and plump, with no wrinkles or excessive fiber at the cut end, straight stems, and tips of the shoots tightly attached to the stem.

- Keep asparagus in a damp towel or wrap it tightly in plastic wrap, then place the asparagus stalks in a bowl of water to keep them fresh longer.

- When preparing bamboo shoots, be sure to wash away the fine hairs on the young shoots. You can also peel off the outer layer of the bamboo shoot if it is too hard or old.
