However, fresh bamboo shoots pose a risk of poisoning due to their high cyanide content. One kilogram of bamboo shoots can contain up to 230 mg of cyanide. When ingested, under the action of digestive enzymes, cyanide is converted into hydrocyanic acid (HCN) – an extremely toxic substance that can be dangerous to health.

Symptoms of food poisoning usually appear about 30 minutes after eating and include nausea, vomiting, headache, and dizziness. In severe cases, the patient may experience seizures, jaw stiffness, respiratory failure, cyanosis, and even coma.

Besides containing natural toxins, fresh bamboo shoots on the market also risk chemical contamination because some establishments use bleaching agents to preserve them and make them look more appealing. Long-term consumption of this type of bamboo shoot can affect the liver, kidneys, and digestive system.

To ensure safety, bamboo shoots need to be selected and prepared properly. Fresh, natural bamboo shoots that haven't been bleached are preferred. Before cooking, wash them thoroughly and soak them in salt water or rice water for 30-45 minutes to remove toxins. Then, boil them thoroughly 2-3 times, each time for about 15-20 minutes, keeping the pot lid open to allow toxins to evaporate.

Proper preparation plays a crucial role in removing natural toxins from bamboo shoots. If you experience any suspected poisoning symptoms after eating them, you should quickly go to a medical facility for prompt treatment to avoid dangerous complications.
