The secret to preserving the freshness, crispness, and sweetness of squid, passed down through generations by fishermen, is to boil it right on the boat after each catch. This results in a higher selling price and makes it more sought after by traders. (Photo: TP)

Particularly in Cua Lo (Vinh City), due to the unique practice of night squid fishing near the shore, fishermen have found ways to keep the squid alive in the boat's hold. The squid arrive at shore still swimming, and when caught and sold, they are still fresh, twitching, with eyes and spots on their bodies shimmering with iridescent colors, hence the name "jumping squid" or "flashing squid." The selling price can reach 350,000 - 500,000 VND/kg. (Photo: TP)
