Specialty of jujube leaves on salt fields in Nghe An
(Baonghean.vn) - The water mimosa plant growing in salt fields has become a favorite dish for urban residents. Farmers in Quynh Luu (Nghe An) are "hunting" for this vegetable to sell to traders.

We followed Mrs. Nguyen Thi Thuy, in Hamlet 10, Quynh Ngoc Commune, to the salt fields in Quynh Minh Commune to pick water mimosa. As someone with more than 10 years of experience in the profession, Mrs. Thuy knows better than anyone when water mimosa will grow in abundance.

Ms. Thuy said that every morning at 4am, she goes to some salt fields in the district to pick water mimosa, some days she picks about 10kg of vegetables. In one morning, she also earns 80-100 thousand VND.
“The vegetable is usually harvested year-round, but it is tastier when picked from January to May because the weather is cool and the vegetable grows abundantly,” Ms. Thuy shared.

Previously, the job of picking jujube leaves in Quynh Luu only had about 10-15 people, but in recent years, when jujube leaves became a favorite dish of the people, the number of people picking jujube leaves increased to 30-40 people.
Ho Thi Huong, an 8th grade student at An Hoa Secondary School, has also been picking jujube for 3 summers. Due to her family’s difficult circumstances, every summer vacation, Huong follows the ladies and uncles in the neighborhood to pick jujube.
She went to all the salt fields in the district from An Hoa to Quynh Tho, Quynh Thuan, then Quynh Minh, Quynh Nghia, every morning from 4am to 9am, Huong also picked about 4 to 6 kg of vegetables. On average, 1 kg of vegetables is sold for 10,000 VND.

The people of Quynh Luu often buy jujube leaves to make salad, combined with peanuts, sugar, chili, lemon leaves, bean sprouts, carrots... Jujube leaf salad served with rice noodles and vermicelli has created the brand of Quynh Luu cuisine and is known by many people inside and outside the district.
Ms. Pham Thi My (55 years old) is a person who specializes in buying jute leaves in Quynh Tho commune. She said: Every day she buys about 50 - 70 kg of jute leaves from people, then sends them by car to Hanoi and Vinh city to sell to customers.
