Mr. Nguyen Van Cong - Head of the Cooperative Group producing rice paper and peanut candy in Vinh Duc craft village (Do Luong town) said: "The group has 7 households producing rice paper and peanut candy. This is a traditional profession passed down from our ancestors, over 300 years old, coming to our class we are the 5th generation following the profession. Previously, the production was manual so the quantity of products made was small, only enough to sell at the rural markets in the district. After being recognized as a craft village, especially after the rice paper and peanut candy products of households in the cooperative group were recognized as 3-star OCOP, the consumption market opened up widely". Despite the introduction of machinery and technology into production, with their own family secrets, candy makers in Vinh Duc craft village still maintain the traditional delicious taste. Right from the stage of selecting raw materials, it is very elaborate. Although the process of stirring the malt and sugar is supported by machines, the cook must keep an eye on it and test the adhesion with his own experience so that the candy batch is not too young and easily runny, and also not too old, which will make it hard, bitter, and unappetizing.
