Cha dam - a dish that sounds quite strange to many people, because this was only a "famine relief" dish of the people of Tan Nhuong village at one time. According to Ms. Phan Thi Soa, a resident of Tan Nhuong village, "Cha dam was a dish of the villagers during the time of poverty. There were a lot of dam (field crabs) in the fields, we couldn't eat them all and didn't know how to preserve them for a long time, so we thought of making cha dam, grilling them to eat instead of rice, and if we couldn't eat them all, we would stew them with salt to save food for the next day." After decades, the dish of Cha Dam only remains in the memories of the elderly in the village, few people know about this dish anymore. Photo: Thanh Phuc |

The main ingredients of the Dam sausage are Dam, chicken eggs, lean pork shoulder, Khang Dan rice flour and spices including: fresh turmeric, turmeric leaves, ginger leaves, chives, tangerine peel... Photo: Thanh Phuc |

Clean the dam, scoop out the juice, take only the egg yolk, mince the lean shoulder meat and mix with Khang Dan rice flour and crushed spices to form a thick, fragrant mixture. Photo: Thanh Phuc |

This mixture is poured into an aluminum mold, lined with fresh banana leaves underneath and spread evenly. Photo: Thanh Phuc |

Then, put it on the stove to fry both sides until golden brown. This step requires meticulousness, quickly flipping the patties and adjusting the heat according to the doneness of the patties. If the heat is too low, the patties will be fishy, if the heat is too high, the patties will be dry, not chewy and crispy. Photo: Thanh Phuc |

From a rustic dish, Cha Dam has now become a popular specialty among the people. Cha Dam is available in many restaurants, hotels and orders in and out of the province. Photo: Thanh Phuc |

If there is a stable output, we will expand to other branches, develop Cha Dam into a craft village, build Cha Dam into an OCOP product of Hung Dao commune. Currently, we have received many Tet orders from customers near and far," said Ms. Tran Thi Hau - Chairwoman of the Women's Union of Hung Dao commune. Photo: Thanh Phuc |
