In the Western region of Nghe An, in addition to livestock products, there are also many products processed from wild bamboo shoots, such as dried bamboo shoots. According to Ms. Quang Thi Van, the owner of a bamboo shoot purchasing and processing facility in Na Chang village, Tien Phong commune (Que Phong), from the end of April to the beginning of October every year is the season for harvesting wild bamboo shoots, mainly bamboo shoots. During this time, people in the area flock to the forest to harvest bamboo shoots for sale. Usually, people go from dawn to 11 am and return, and all the collected products are sold to bamboo shoot processing facilities in the commune. Photo: Xuan Hoang

Mr. Luong Vi Tan, a resident of Na Chang village, has just harvested wild bamboo shoots and said that the most delicious bamboo shoots are those that have just emerged from the ground about 20 - 30 cm. After cutting, use a sharp knife to peel off all the stems, taking only the innermost young bamboo shoots. This morning, he alone harvested 24 kg of bamboo shoots, selling them for 8,000 VND/kg, earning nearly 200,000 VND. Photo: Quang An

Bamboo shoot processing facilities, as soon as they purchase, hire workers to process them immediately. Ms. Quang Thi Van said that before boiling bamboo shoots, they have to cut off part of the root and tip to ensure the dried bamboo shoots are delicious, because farmers often do not cut off all the old parts to add weight. According to the experience shared by Ms. Quang Thi Van, to get a nice yellow color after boiling, the water must be boiling before putting the bamboo shoots in the pot. When the water in the pot has boiled, put the whole basket of bamboo shoots in, continue to boil for at least 30 minutes before taking them out to dry. If you put the bamboo shoots in with the water to boil, the bamboo shoots will turn white, which is not satisfactory in terms of appearance. Photo: Quang An

To make the dried bamboo shoots beautiful and golden, ensuring quality, it is best to dry them in the sun. Therefore, on sunny days, bamboo shoot processing facilities use corrugated iron sheets or bamboo mats to dry the bamboo shoots all day. Ms. Lang Thi Hanh said that if the sun is strong, it takes 3-4 days of continuous drying for the bamboo shoots to be completely dry. To dry the bamboo shoots evenly, you must regularly stand in the sun to turn each piece of bamboo shoot. Photo: Xuan Hoang

After boiling the bamboo shoots, use a knife to cut one side lengthwise to spread the bamboo shoots out to dry in the sun. Mr. Luong Van Ha - Chairman of the Farmers' Association of Tien Phong commune said that in the commune there are many bamboo shoot processing facilities, on average each facility purchases from 500 kg to 1 ton of fresh bamboo shoots per day. Of which, a portion will be used to sell to the market for fresh consumption, and a portion will be used to process dried bamboo shoots. Photo: Quang An

Bamboo shoots are processed and dried on open land near the forest, so they are not polluted by dust. If the weather is not sunny, people have to dry them in a dryer, so every bamboo shoot processing facility has to invest in a dryer using coal or rice husk. Photo: Xuan Hoang

According to bamboo shoot processing facilities, to produce dried bamboo shoots, many steps must be carried out, from pre-processing fresh bamboo shoots to boiling, drying... so to produce 1 kg of dried bamboo shoots, 20 kg of fresh bamboo shoots are needed. Therefore, dried bamboo shoots are sold on the market for hundreds of thousands of VND/kg, while at processing facilities and wholesalers for traders, the price is currently from 180,000 - 190,000 VND/kg.
