(Baonghean.vn)- One-sun-dried chicken thigh fish is a unique creation of the people of Nghe An coastal area, becoming a favorite specialty of many people. The fish is made from flying fish, not puffer fish as some information is spreading.
Recently, some information on social networks and electronic newspapers about the truth of the fact that sun-dried chicken thigh fish (a specialty of Nghe An sea) can be processed from puffer fish has caused confusion among consumers, significantly affecting processed seafood in Nghe An.
In Hoang Mai town alone, processing chicken thigh fish is a regular activity during the season. Seafood processing establishments in Quynh Phuong ward said they have also received many questions from customers and consumers in recent days.

Mr. Cuong, the owner of a seafood processing facility in Quynh Phuong Ward, said that his facility has been making sun-dried chicken thigh fish, also known locally as sun-dried flying fish, for about 3-4 years. The raw materials are purchased from fishing boats of Quynh Phuong Ward fishermen operating in the Gulf of Tonkin. During the main season, from September to December of the lunar calendar every year, Quynh Phuong fishermen catch large quantities of flying fish.
Previously, this type of fish was imported by fishermen to sell to fishmeal production facilities, a small portion was grilled for consumption in rural markets. In the process of researching seafood processing, Quynh Phuong ward people created the dish of one-sun-dried flying fish.![]() |

The characteristic of flying fish is that it has no small bones, but many fin bones and head bones, white fish meat, sweet and fragrant taste. After being processed, the head and fin bones are cut off, the skin is peeled, dried in the sun for 1 day and frozen. Flying fish can be processed into delicious dishes such as fried, sweet and salty braised... which are very popular with housewives.
