Ms. Van added that to have the best quality, the persimmons must be fresh and still on the tree so that when picked, they still have enough sugar.
After picking, the persimmons will be cleaned with clean water, the ears removed and the skin peeled, leaving only the stem. Next, the persimmons will be cleaned a second time and then placed on a tray in the oven to dry for about 3 hours. Finally, the persimmons will be hung up on strings.

Currently, the facilities producing dried persimmons are mainly concentrated in Xuan Truong, Trai Mat, Ward 10, Da Lat... In particular, dried persimmons from Da Lat help increase the value and enrich the local specialty products.
It is known that to get 1 kg of dried persimmons, about 7 - 8 kg of fresh persimmons are needed, so the selling price is usually 2 - 3 times higher than traditional dried persimmons. Currently, dried persimmons have quite a high price, averaging about 400 - 450 thousand VND/kg depending on the time.
