Currently in Hung Son, there are more than 30 households in villages 6, 8, 9 making cassava rice paper, the most is in hamlet 9 with 20 households following the profession. |

If the usual rice paper is made from rice flour, the Hung Son people's rice paper is made from delicious cassava grown by the locals, carefully selected for its low fiber, plump, round tubers, then ground. |

The mixture of tapioca flour after being ground with water forms a smooth, white powder, then add a little black sesame, spices, mix and knead well. The spices are adjusted depending on the secret recipe of each professional. |

According to bakers, making cassava cakes seems simple but requires meticulousness and skill in each step. |

Ms. Tran Thi Thanh Thuy, village 9, Hung Son commune, shared: The main season for making cassava rice paper is from September of the previous year to February of the following year. To have a delicious cake, the most important step is to make the cake. When the cake is cooked, people take it out very skillfully so that it does not tear or deform, then slowly put the cake on a tray and remove the cake. |

Although the rice paper making job is not hard, it requires staying up late and waking up early. From 3am, villagers start making rice paper, the work lasts until past noon, lunch at 2pm is common. Every day, a household can make at least 300 rice paper, many can make 500-600 rice paper. After deducting expenses, each household earns from 300-400 thousand VND per day. |

After the rice paper is done, take it out to dry for about 1 hour and then turn it over. After 4-5 hours, it will be dry. Do not let the rice paper dry too much, it will be brittle and easy to break. |

Cassava rice paper is imported at a price of 1,300 - 1,500 VND/piece. In addition to selling raw rice paper, many households also bake cooked rice paper to sell at a price of 2,500 VND/piece. |

Cassava rice paper here is not only consumed in Anh Son but also everywhere in the province such as: Con Cuong, Do Luong, Nam Dan. Although it is not as popular as saying "one capital, four profits", the cassava rice paper profession has become the main source of income for many households here. |
