Currently, Tan Huong commune still has over 30 households that still maintain the traditional profession of making molasses. Previously, sugarcane was pressed by buffalo-pulled buckets, but now it is pressed by diesel-powered machines, with a gear system that converts the engine speed from 500 rpm to a few dozen rpm, so the sugarcane is squeezed out of all the juice. The molasses furnace is a series of furnaces consisting of 4-5 pans that boil at the same time to take advantage of the heat, because the most important thing in the molasses boiling process is to keep the temperature stable. Photo: Dinh Chien |

The molasses are boiled continuously for 4-5 hours, and the foam must be constantly skimmed off until the molasses turns golden. Tan Huong molasses is currently sold at an average price of 20,000 VND/liter. However, what makes consumers trust Tan Huong molasses is that it is produced with a quality assurance process, and the molasses after cooking is preserved naturally, without the use of chemicals. |
