1. Crab noodle soup
Ingredient:
- 1 kg fresh vermicelli, 100 g minced meat, 50 g dried shrimp, 2 eggs.
- 3 tomatoes, 3 fried tofu blocks.
- Scallions, shrimp paste, sugar, seasoning powder, pepper, annatto color.
- Raw vegetables: 1 Da Lat coron cabbage, washed and finely chopped, mixed with bean sprouts and perilla.

How to prepare:
- Slice tofu, wash and cut green onions into pieces, cut tomatoes into wedges.
- Grind the field crab, remove the flesh, let it settle. Then put it in a pot, add a little salt, seasoning powder, sugar and bring to a boil. Stir gently to let the crab curd thicken, scoop it out and set aside in a bowl.
- Soak dried shrimp until soft and put in blender. Add shrimp with minced meat, eggs, minced green onion, minced garlic, seasoning powder, sugar and mix well.
- When the crab broth boils, use a spoon to scoop portions into the pot. When the cooked meatballs float to the surface, add the tofu. Saute tomatoes with annatto seeds and add them in. Season the broth with a little shrimp paste and other spices to taste.
2. Mussel noodle soup
Ingredient:
- 1 kg of raw mussels, 2 tomatoes, green onions, raw vegetables, lettuce, water spinach, banana blossom, perilla...
- 1 kg fresh vermicelli (for 4 people), chili paste, annatto color, seasoning powder and sugar.

How to prepare:
- Clean the mussels' outer shells and soak them in rice water for about 2-3 hours to remove all the mud. Rinse the mussels with clean water and put them in a pot to boil.
- Boil the mussels until cooked, remove and take out the meat. Use the mussel water to make broth. Cut tomatoes into wedges, and green onions into pieces.
- Heat cooking oil, add mussels and stir-fry until cooked, then add tomatoes and stir well. Add 1 teaspoon of chili paste and a little annatto color.
- Finally, add the mussel broth and bring to a boil. Season to taste and add green onions.
3. Spring roll vermicelli
Ingredient:
- 150 g lean meat, 50 g shrimp, 50 g crab meat.
- 1 shredded taro, 10 black fungus mushrooms, soaked until soft, washed and sliced, minced garlic.

How to prepare:
- Mince lean meat, shrimp, crab meat and mix with black fungus. Slice taro. Add a little seasoning powder, sugar and mix well until soft and supple. Roll the spring rolls into small, bite-sized rolls.
- After rolling, deep-fry the spring rolls until golden brown. Add the raw vegetables and chopped cucumber to the bottom of the bowl, then add the vermicelli and spring rolls to the top. Serve with a bowl of slightly sweet dipping sauce.

Making:
- Wash the pork belly, cut it into bite-sized pieces. If you have small children, you can add some minced soft shoulder meat to make meatballs. Marinate the meat with crushed and minced shallots and a little fish sauce, MSG, and pepper. Season moderately because you will also eat it with dipping sauce. After marinating the meat for 30 minutes to an hour, put the meat on a baking tray or skewer and grill over charcoal or in the oven until golden brown and fragrant.
- Pick the tops of the herbs and wash them. Wash the cucumbers, peel them, split them lengthwise or slice them to make sweet and sour sauce depending on your family's preference.
- Make the dipping sauce: Carve the carrots into flowers, thinly slice them, crush and mince the garlic, cut the chili into thin strips and put them in a small bowl, pour in a little vinegar and soak. In another bowl, mix the sugar water with hot water (with a strong sweet taste), then add fish sauce to taste. If you are experienced, you can tell how salty or bland the dipping sauce is by looking at the dark or light color. Pour in the garlic and chili soaked in vinegar and add a little lemon juice to get the right amount of sour, spicy, salty and sweet. This method helps the garlic and chili float on top of the dipping sauce, creating a beautiful color.
- Arrange noodles, spring rolls, and dipping sauce on a tray and serve hot.
5. Vermicelli with meatballs
A bowl of delicious steaming vermicelli with meatballs on a winter morning will definitely be a delicious and attractive dish for your family members.
Ingredient:
- 1 kg pork bones, 1/2 kg spare ribs.
- 2 tomatoes, 100g pork roll, 100g fried pork roll, 100g cinnamon pork roll.
- 100 g shrimp patties, 100 g minced pork, 2 wood ear mushrooms.
- Scallions, shredded water spinach, banana blossom, bean sprouts, basil, chili and shrimp paste.

How to prepare:
- Wash tomatoes and cut into wedges. Wash green onions and cut into pieces. Cut all kinds of sausage into bite-sized pieces. Soak wood ear mushrooms until soft, chop finely and mix with minced pork.
- Clean the marrow bones and simmer to get the broth. Clean the spare ribs and boil briefly.
- Put the broth into another pot, add the pre-boiled spare ribs and cook until done. Next add the meatballs.
- Heat cooking oil, add tomatoes and stir-fry, then add to the broth. Season to taste, finally add green onions and it's done.
- Blanch the noodles in boiling water, arrange the ingredients on top and pour in the broth. Serve with shrimp paste and a plate of raw vegetables.
