Many Vietnamese housewives are looking to buy French foie gras to add to their family's expensive meals.
“I really like to eat French foie gras. One day I craved it so much that I asked my husband to take me to eat foie gras at a restaurant. I was afraid that the piece was too small and cost nearly 500,000 VND. I am pregnant so I crave it even more, so I am trying to find it,” said Ms. Ha Anh (Cau Giay, Hanoi).
According to Ms. Ha Anh, French foie gras is an excellent food, because of its special richness, and it is "addictive". Like Ms. Ha Anh, Ms. Thao (Hoang Quoc Viet) is also a fan of foie gras.
“My whole family loves French foie gras, so we often go to import stores to buy it. The price is a bit high, but because the food is so delicious, we don’t mind spending the money,” said Ms. Thao.
According to a survey, live French foie gras is currently being sold by import stores for about 1.8 - 1.95 million VND/kg.

Among them, the type of goose liver commonly sold in the Vietnamese market is Foie gras - a product made from the liver of a specially fattened goose/duck. The taste of this type of liver is fatty, rich and fragrant like butter, unlike normal liver.
Foie Gras can be sold whole, or prepared into a mousse (finely minced) or pâté. Foie Gras is served as an accompaniment to other dishes such as bread or grilled meats.
According to the seller, the French geese/ducks raised for liver production will have their movements limited to a minimum. Each one will be kept in a box, allowing it to eat and drink water. Their food is natural grains.
When the goose is about to be harvested, it is specially fattened for 12 to 18 days to make the liver bigger and more fatty. Therefore, the price of French goose liver/duck liver is quite high. It is often chosen as an ingredient for high-class dishes in luxury restaurants.

It is normal for people to buy a few kilos at a time, maybe to eat gradually, or to entertain parties.”
According to Ms. Lan, the best dish with foie gras is pan-fried and served with dried sliced bread and sweet and sour mango pieces. In addition, foie gras soup is also popular.
Besides fresh foie gras, foie gras pâté is also a dish sought after by the rich Vietnamese. French foie gras pâté has a lighter brown color and is more fatty than other types of pâté thanks to a layer of golden, shimmering fat, famous for its sweet, cool, and rich flavor.
Compared to other common pate, French goose liver pate is quite expensive, ranging from 300,000 to 7,000,000 VND/tael.

On an online imported food store, the product Foie Gras d'Oie Entier au Jurancon - Foie Gras d'Oie Entier au Jurancon 125g costs 750 thousand VND; Foie Gras d'Oie Entier - Foie Gras d'Oie Entier 180g costs 680 thousand VND. Meanwhile, the price of French duck liver is cheaper, around 100 thousand VND/tael.
According to Ms. Lan, French foie gras pate is best served with dense bread or grilled sandwiches.
