Quynh Luu: More than 1 million liters of fish sauce processed to serve the Tet market

(Baonghean.vn) - At this time, many fish sauce production facilities in Quynh Luu (Nghe An) are busy entering the season; it is expected that more than 1 million liters of fish sauce will be prepared for this Tet holiday.

Starting from December of the solar calendar, fish sauce production facilities in An Hoa, Quynh Tho, Quynh Ngoc, Tien Thuy communes... are urgently making Tet goods.

Ms. Tran Thi Loan’s fish sauce production facility in Quynh Tho commune is busy filtering fish sauce and bottling it to supply the market. Since the beginning of the year, her facility has purchased tons of fresh anchovies as raw materials for processing.

The traditional method of making fish sauce is to mix fresh fish with salt, sesame, and rice powder, then soak and dry them in the sun, thanks to which the processed fish sauce is delicious. Each year, her facility supplies the market with tens of thousands of liters of fish sauce.

“Near Tet, customers call to order a lot, each day my family sells 300 - 350 liters of fish sauce; currently I have nearly 20,000 liters in stock to supply the market during Tet” - Ms. Loan shared.

Quynh Luu is a locality known in many places for its traditional fish sauce making profession with delicious and rich flavor in the province. To prepare goods for sale during Tet, more than 500 fish sauce production establishments and households in Quynh Luu are rushing into the season.

Normally, fish sauce is produced by Quynh Luu people all year round; however, in the months near Tet, the fish sauce output produced by households is double that of normal days.

Thanks to preserving the traditional processing secrets, Quynh Luu fish sauce is favored by many customers with reasonable prices and delicious quality. Currently, the price of grade 1 fish sauce is from 70,000 - 80,000 VND/liter; grade 2 is 50,000 - 60,000 VND/liter; grade 3 is 30,000 - 40,000 VND/liter.

With hundreds of establishments and households producing fish sauce, in 2017, fish sauce output in Quynh Luu reached 4.9 million liters. In the last two months of the year (November and December of the lunar calendar), the output of fish sauce sold to the market reached over 1 million liters to serve the Lunar New Year.
