Over 50% of Vietnam's population lacks vegetables and fruits in their daily meals. This puts them at risk of developing serious diseases.

According to Dr. Dzoãn Thị Tường Vi, Deputy Director of the Institute of Clinical Nutrition, Vietnam grows a lot of vegetables, but more than 57% of the adult population consumes insufficient amounts of fruits and vegetables. Meanwhile, the World Health Organization recommends 400 grams per day.

According to Doctor Tuong Vi, green vegetables are a source of vitamins, minerals, and fiber, as well as many beneficial components such as carotenoids, vitamin C, folate, and selenium.

"On average, we should eat 300-500 grams of ripe fruits and vegetables in red, green, yellow, white, purple, and orange colors per day," Dr. Tuong Vi recommends.

Professor, Doctor Nguyen Xuan Ninh - a nutrition expert at Medlatec General Hospital - said that unbalanced eating habits are causing many people to suffer from metabolic disorders.

This syndrome encompasses multiple conditions such as overweight, obesity, lipid metabolism disorders, glucose metabolism disorders, hypertension, diabetes, and gout. It can also lead to numerous complications such as cardiovascular disease and kidney failure. Notably, the age at which people develop this condition is becoming increasingly younger.

Dietary fiber plays a crucial role in preventing and treating metabolic disorders. There are two types of fiber: insoluble fiber (abundant in green vegetables, fruits, bamboo shoots, etc.) and soluble fiber (abundant in the bran of rice, barley, corn, peanuts, beans, the white pulp of grapefruit and oranges, apple peels, grape peels, etc.).

Insoluble fiber helps lower blood cholesterol levels. Soluble fiber, on the other hand, affects lipid metabolism, reducing the risk of atherosclerosis.

Regarding blood sugar stabilization, fiber helps limit the increase in blood sugar after meals, especially soluble fiber, due to its ability to increase insulin sensitivity. At the same time, it participates in triglyceride metabolism, helping to effectively control blood sugar levels.

According to experts, diseases caused by modern eating habits are becoming increasingly common, accompanied by numerous health consequences. Experts recommend that people be more mindful of their daily diets, including including sufficient amounts of vegetables daily to take advantage of this valuable source of fiber.
