According toTelegraph,Purple foods such as purple carrots, sweet potatoes, purple cabbage and eggplant... are among the vegetables that will hit shelves in 2018, according to the supermarket's Top 10 food trend forecast for 2018.
According to experts, consumers will pay attention to all purple foods when choosing healthy foods and tend to eat colorful meals.
According to health organisations, including the British Heart Foundation, eating a variety of natural, colourful foods is good for health as it ensures a wide range of nutrients in the food.
“Social media has changed the way we think about food,” says Nicola Waller, head of fresh produce at Waitrose. “We’re sharing more pictures of our food than ever before and as a result shoppers are looking for colourful foods on their plates.”
Last year, Waitrose's Food and Drink Report found that a quarter of people are more concerned about how food looks on their plate than they were five years ago, as visually appealing food can make eating more enjoyable, according toTelegraph.
Also making Waitrose's top 10 food and drink list for 2018 are Indian street food, Japanese raw foods, plant-based proteins like beans and grains and Aperitifs - foods that are increasingly popular with young people.
