These substances stick to the meat with the smoke and can cause cancer. To overcome this, you need to grill the meat at a low temperature and cook it until done.
When choosing food, choose low-fat foods, wrap in foil, banana leaves or dong leaves, apply vinegar or lemon juice to food before grilling... these things will help limit the production of heterocyclic amine compounds.
Here is a tip to eat grilled meat more safely: before eating, you should rinse the grilled meat in the dipping sauce so that the burnt meat around the edges can spread out; when eating, only eat the unburnt part of the meat.
