How to preserve lychee
Research by the Southern Fruit Research Institute has been applied to some large lychee growing areas in our country. Applying this method can preserve fresh lychees for 1 month while still maintaining color and quality, bringing high economic efficiency. To apply this method effectively, farmers need to pay special attention to the following factors:
Harvesting: Farmers should pay attention to gently harvesting lychees on dry days, avoiding rainy days. Only harvest lychees when the skin is evenly red (about 102 - 109 days after flowering). Tie lychees into bunches of about 3 - 5 kg or store them in loose baskets of about 10 kg. Remove cracked, crushed, rotten, unevenly ripened and deformed fruits.
How to handle: You should prepare materials and some chemicals including hydrochloric acid (HCl) or NaHSO3, a dipping tank, a fan, a plastic basket... First, mix 60 grams of NaHSO3 in 1 liter of clean water, stir well until dissolved. Then, dip each bundle or the entire plastic basket of lychee fruit into the NaHSO3 solution for 10 minutes. The NaHSO3 solution has the effect of hardening the fruit peel, limiting water loss, killing and preventing bacteria and fungi from entering and damaging the fruit. Take it out and dip it in a 4% HCl solution for about 2 - 5 minutes. The HCl solution has the effect of stopping the color, keeping the fruit peel fresh, increasing the commercial value.
Packaging, preservation, transportation: After processing, let it dry naturally or use a fan to dry it, then pack it in a foam box to transport it to the place of consumption by refrigerated truck or store it in a cool warehouse with a temperature of 4 - 5 degrees Celsius, air humidity of 90 - 95%. Polyethylene plastic bags can also be used to store the lychee fruit to avoid dehydration and keep the color of the fruit peel longer.
Preservation by CAS technology
Recently, ABI Group (Japan) also introduced a lychee preservation technology in Bac Giang, under the project "Cooperation to build a CAS technology center to preserve Vietnamese agricultural products and food".
CAS is a new, advanced freezing technology that does not break membranes and cell walls, maintaining important flavor components in food, thereby preserving food better and keeping it fresh longer than with traditional freezing technology. With this technology, lychees can be preserved for 1 to 3 years while still retaining their flavor and freshness. This technology can be used to make lychee jam and other lychee products, contributing to increasing the value and expanding the consumption market for lychees. CAS technology is environmentally friendly and energy-saving.
