Ingredients to prepare
- 10–15 ripe kumquats (dark yellow)
- 1g salted apricot (or regular salt)
- Enough honey (about 2 teaspoons)
- 350ml filtered water
- Moderate ice cubes
- 1 slice of lemon for decoration
- (Optional) a few sprigs of mint for added flavor
How to do it
Step 1: Prepare kumquat
Rinse the kumquats under running water and drain or pat dry. Place the fruit in a cup and mash lightly with a pestle to separate the seeds and release the essential oils from the skin. If you like, you can mash them with a few sprigs of mint for a refreshing flavor.

Step 2: Mix salt
Remove the kumquat seeds, keep the flesh and juice. Add the salted kumquat to the mashed kumquat, mix well to absorb the flavor.

Add water and honey to the mixture. Stir well to combine all ingredients. Then add ice cubes to the glass and garnish with a slice of lemon at the rim.
