The recipe for pickled kumquat is very easy, anyone can do it. The most popular is pickled kumquat with honey and rock sugar.

Prepare:

- Cherry: 1 kg, the older the better. Choose fresh, ripe, thin-skinned fruit.

- Wild honey: 1 liter.

- Rock sugar: 0.5 kg.

- Glass bottle with lid, bamboo slat compression tray.

Method 1: Soak lemon for 3 months

- Wash the lemon, mix a little salt with cooled boiled water, soak for 30 minutes then remove the lemon and let it dry completely. Cut the lemon into thin slices, soak the seeds for best results.

- Crush rock sugar, pour a layer of sugar into the jar, then a layer of lemon (repeat until finished). Finally, pour in honey. Use a bamboo tray to press the lemon down. Leave for about 3 months to use.

In this soaking method, people can also put kumquat, honey, and rock sugar in a blender, blend them to make lemon, honey, and rock sugar syrup. When giving it to children, filter out the residue.

Method 2: Soak lemon for 6 months

- Wash the lemon, mix a little salt with cooled boiled water, soak the lemon for 30 minutes then remove and drain. Make a few slits along the lemon.

- Clean the glass jar, rinse with boiling water, drain. Pour rock sugar into the jar, then a layer of lemon (do this until finished), finally add honey. Use the bamboo tray to press the lemon down. Leave for 6 months to use.

Note: Use a glass jar. Buy a jar that is slightly larger than the amount of lemons you will be soaking because after a while the jar will ferment and release a lot of lemon juice. Also, do not seal the jar too tightly. Keep the jar in a cool place (not in the refrigerator).

When you first soak it, you should check the jar regularly. If you see bubbles after a few days, skim them off. Do not let the lemons float above the grill because they will easily get moldy and scum. After a few weeks, you can use the lemons soaked in honey and rock sugar. You should soak the lemons for as long as possible. At first, the fresh lemons will taste a bit bitter, but after a long time, the peach lemons will taste like dried apricots, which are good for the throat and improve health.

This remedy is suitable for all families, especially those with children aged 1.5 years and older. On cold days or when the child has just started coughing, take a spoonful in the morning when he wakes up and gives it to the child to drink. For adults, slice the soaked lemon, mix it with the water in the box, chew and hold it in the mouth for about 15-20 minutes, then swallow, several times a day.

Kumquats may be suitable for one person but not for another, or they may not be effective when used when having a severe cough. People with mouth ulcers should not use kumquats soaked in honey. Instead, soak kumquats in salt and sugar.

Basically the method is the same as above, for every 1 kg of lemon, use 1 kg of salt. Soak for about 3 weeks until the lemon is soft, then dry in the sun until the lemon peel has a layer of white salt on it.

Cut the lemon into quarters (if you like, you can remove the seeds to reduce the bitterness), then arrange the lemons in a jar. Boil sugar (depending on your taste) with 2 bowls of water, add chopped ginger and licorice. Cook until the sugar thickens like honey, then remove from heat and let cool. Pour the sugar into the lemon jar, cover tightly, and soak for another 3 months before using.
