Reduce diabetes by eating rice with chicken breast
Scientists have made an important discovery, useful for diabetic patients as well as the prevention of this dangerous disease, related to the benefits of combining rice with other foods.

In fact, rice is a food that increases blood sugar levels very high with a Glycemic Index (GI) of up to 96 - this is the reason why diabetics have to limit rice in their daily diet. Meanwhile, in many Asian countries, including Vietnam, rice is a staple food, causing many troubles for people with diabetes.
Professor Jeyakumar Henry, Director of the Clinical Nutrition Research Centre (CNRC) of Singapore, said the centre's research began in 2014 with the popular dish here, chicken rice. The results of the study, published in the European Journal of Nutrition, showed that when rice was combined with chicken breast, peanut oil and vegetables, the GI index was only at a good level of 50.
According to scientists at the center, when eating rice with chicken, it is best to drink soup (chicken broth, chicken soup...) before eating because this helps reduce the body's reaction to sugar. The reason is that chicken soup is rich in amino acids - the type of acid that stimulates the body to secrete insulin.
In addition, researchers also experimented with chicken essence and found that this amino acid-rich liquid has a powerful effect in reducing blood sugar levels. If you drink chicken essence about 15 minutes before eating, your blood sugar after the meal will decrease by about 1/3.
Further research by CNRC has concluded that eating rice with protein helps to reduce the GI index. In addition to chicken, fish and other meats are also very useful. For those who do not like to eat chicken, the best way is to combine rice with tofu. This combination will give the best GI results.
Additionally, other CNRC studies have shown that drinking soy milk or milk with meals also reduces blood sugar levels, although the soy milk in the CNRC study contained sugar.
GI has a value from 0-100. If the GI is 55 or less, it is a good GI level, from 55-70 is average, and above 70 is high./.
