Loach is also known as field loach, mud loach; scientific name is Migurnus anguilicaudtuy. This is a freshwater fish that lives in ponds, lakes, rivers, and streams; has a round body, flattened on both sides, especially near the tail, about 15 cm long. Loach has a small, slightly round head, small eyes, low mouth with whiskers, thin skin, under the skin there are many glands that secrete mucus so it is very smooth. Loach scales are small, hidden deep under the skin so it is difficult to see; dorsal fin has no hard spines, pectoral and pelvic fins are short, caudal fin is wide.
Loach fish are yellow, brown or dark gray, the back is darker than the belly, there are many dots on the body, each dot is made up of many small dots. At the base of the caudal fin there is a large black dot, on the fin there are many black stripes. In the South there is also chach lau - also a type of loach but very large, grilled, fried or made into hot pot are all delicious.
Loach has up to 9.6% protein with many irreplaceable amino acids, 3.7 lipids (fats), 28 mg Ca, 72 mg P, 0.9 mg Fe and many vitamins such as A, B1, B2... Loach can be processed into many delicious, nutritious dishes, especially nourishing. In addition, loach also has medicinal effects.
In traditional medicine, loach is also called ne thu or thu ngu. This dish helps to strengthen the spleen and stomach, eliminate dampness, and is suitable for people with hepatitis, jaundice, and urinary incontinence. 250g loach, 0.5kg tofu. Clean the loach, remove the head and tail, cut the tofu into pieces, cook until done, then add the fish and boil for a while, add onions, fresh ginger, and spices, and serve as soup.
