Just like that, today in this mountain, tomorrow in another mountain, so the people's life is very difficult and lacking in all kinds of things, from making makeshift houses, to household utensils such as pots, pans, bowls... extremely lacking, so the people have come up with many ways to cook in the situation of not having those necessary utensils, after harvesting the rice grains have been pounded into rice grains and in the mountains and forests there is always available wood, bamboo, and bamboo...
And from there, people came up with a way to cook rice without needing a pot or pan. After soaking the rice, they put the rice in a bamboo tube, then add water to the tube, and finally put the bamboo tube on the fire while roasting and rotating it. Press with your finger until it feels soft enough to hurt, then the rice is cooked. Or when you smell the aroma of the rice, then the rice is cooked. Then, just peel off the bamboo shell and you have rice to eat.
That cooking method is both quick and convenient, and the rice is very fragrant and delicious. The people have maintained it until today and call it bamboo rice. The word “lam” is the way of speaking of the Thai people and it is not a noun, but a verb in Kinh language which means “grilled”. That is the origin of the specialty bamboo rice dish.
