Recently, a group of scientists from the Center for Advanced Research (Cinvestav) of the National Council of Science and Technology of Mexico (Conacyt) has successfully developed an enhanced starch that can prevent obesity, diabetes and cardiovascular diseases.

Researcher Fernando Martínez Bustos, Head of the Research Project, said that after being mixed with some yogurts and appetizers, the starchy product was put into testing and gave positive results.

The ability to prevent obesity of the majority of volunteers consuming the above product was significantly improved, thanks to its similar function to fiber.

Dr. Bustos said that to create this new product, Mexico has abundant, naturally available raw materials, such as starch from seeds, and the cost of mixing this enhanced starch into foods is not high, allowing consumers to easily access it. In the near future, this type of starch will be put into mass production and consumed in the domestic market.

The enhanced starch product won the third prize at the 33rd Mexican Food Science and Technology Award./.
