Production of wine and soft drinks from coconut nectar

Dong Go Coconut Center (Luong Hoa Commune, Giong Trom District, Ben Tre Province) has just successfully produced two products: wine and soft drinks from coconut nectar.

This project was conducted by the research team of Dong Go Coconut Center and accepted by the Science and Technology Council, under the Department of Science and Technology of Ben Tre.

Ms. Nguyen Thi Le Thuy, Director of the Department of Science and Technology, said that coconut nectar is taken from coconut flower cobs (locals often call them “cat’s tongue” or “coconut flower”). Each flower cob can produce nectar for a month and the amount of nectar collected is about 35 - 45 liters.

Coconut nectar contains about 15% sugar, so it has a sweet taste and a very pleasant aroma. After collecting the nectar, engineers will process, ferment and add some micronutrients to create wine and beverage products.

Coconut nectar can also be used to make sugar. With the current price, exploiting coconut nectar to make wine, soft drinks, and sugar is more economically efficient than selling the fruit. The Continuing Education Center of Giong Trom District is also opening classes to instruct coconut growers on how to collect nectar (the price ranges from 7,000 to 8,000 VND/liter).

According to Ms. Nguyen Thi Le Thuy, both of these products are in the final stages of completion to ensure stable quality and longer preservation time before being put into production for supply to the market./.
