The reason is that vitamin C in neutral and alkaline solutions is unstable, especially when there are trace elements such as copper and iron, which are more susceptible to oxidation and decomposition.
Meanwhile, pig liver has a very high copper and iron content (every 100g of pig liver contains 2.5mg of copper and 25mg of iron). When stir-fried, during the time waiting for digestion, vitamin C is oxidized and turns into waste, almost without nutrients.
Regarding pig liver, the expert said that this is a food that is very effective in treating and preventing anemia, but you should not eat too much of it.
The liver is the main organ that detoxifies the pig's body, so this organ concentrates the most harmful waste, including heavy metals, and is susceptible to parasites, bacteria, and viruses.
Especially in sick pigs, eating liver can be very harmful.
In addition, the cholesterol content in pig liver is very high. Patients with cardiovascular disease, lipid metabolism disorders, kidney stones, gallstones, and obesity should not eat foods high in cholesterol such as liver.
Even healthy people should not eat a lot of these organs.
Multidisciplinary physician Bui Hong Minh - Chairman of the Ba Dinh Oriental Medicine Association - who has researched foods that are incompatible - further recommends that when eating pork liver, you should not eat it with fish salad because it is a cold raw food.
If eaten together, it will cause intestinal cancer. However, when you experience this symptom, you can drink hot licorice decoction to cure it.
Experts recommend that when eating liver, it should be processed and cooked thoroughly. You can soak pig liver in salt water for about 10 - 30 minutes before processing to limit toxins.
Then, you need to wash this food thoroughly, squeeze out the blood, and boil it thoroughly to kill the bacteria and parasite eggs in it.
