Cooking food at too high a temperature

The US National Institutes of Health (NIH) warns that cooking meat at high temperatures, such as frying or grilling, produces heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs).
HCAs are created when amino acids, sugars, and creatine react at high temperatures. PAHs are also formed when animal fats that drip onto a fire during grilling are burned.
According to NIH research, high intake of (HCAs) and (PAHs) can cause cancer in mammals. In testing, the types of cancer that commonly appear in mammals are breast, colon, liver, skin, lung and prostate cancer.
This evidence suggests that cooking food at high temperatures may pose potential risks to human health.
