How to cook mixed vegetable soup to help cool down in the summer

On hot summer days, there is nothing more refreshing than a bowl of cool, delicious and nutritious soup. Mixed vegetable soup with vegetables, meat and seafood is a great suggestion for dinner. You only need this dish with rice or vermicelli to be full and "flattering" the whole family's taste.

The soup has a sweet taste, a light aroma, the vegetables are cooked just right and the skin is soft and moist, soaked in the broth. With just a few familiar ingredients, you have a delicious, refreshing pot of soup suitable for all ages.
Ingredient
- 1 piece of pork skin
- 150g minced pork
- 10 fish balls
- 1 squash
- A little dried wood ear
- 1 box of oyster mushrooms
- 5 cloves garlic
- 1 green onion
- Seasoning: oyster sauce, pepper powder, shiitake mushroom powder, cooking oil, sesame oil

Making
Step 1:
Soak dried wood ear mushrooms in cold water until they expand, then wash them. Wash oyster mushrooms and tear them into bite-sized pieces. If the fish balls are frozen, defrost them first.
Step 2:
Wash the pork skin, soak in cold water for about 1 hour to soften. Blanch the pork skin in boiling water for 1 minute, remove and soak in cold water, squeeze dry and cut into bite-sized pieces. Peel the squash and cut into pieces. Mince the garlic, cut the green onion stem and leaves separately.
Step 3:
Heat cooking oil, add minced meat and stir-fry until cooked. Add onion root and garlic, saute until fragrant. Add oyster mushrooms, wood ear mushrooms and pork skin and stir-fry quickly over high heat for about 2 minutes, then add enough boiling water and cook over high heat.
Step 4:
Add fish balls, cook over medium heat for 5–6 minutes. Season with oyster sauce, pepper and spices to taste.
Step 5:
Add squash, cook over high heat for another 5 minutes until soft. Add sesame oil, stir well, taste for seasoning. Sprinkle with green onions, turn off heat, scoop into bowl.

A bowl of hot, refreshing, nutritious mixed vegetable soup will make dinner light yet nutritious. On hot days, you can eat it with vermicelli to change the taste, both delicious and cool.
