Ms. Nguyen Thi Hoa in Tien Thuy commune (Quynh Luu) said: "To have a quality product, the fish must be fresh. Every day, the family hires 3 workers to process about 200 - 250 kg of dried anchovies. Because it is processed elaborately, retaining the salty and sweet taste of the fish, customers order a lot during Tet." Photo: Viet Hung |

For the people of Quynh Nghia fishing village, the dish of croaker fish is a "customer-attracting" specialty during Tet. The croaker fish is caught from boats near the shore; after purchasing, people clean it, remove the head and intestines, and split it in half. After that, the fish will be marinated with spices such as sugar, hot chili, and pureed soy sauce. Depending on the buyer's needs, the fish can be dried in the sun for "one day" or 3-4 days before being packaged. Photo: Viet Hung |

Near Tet, many dried squid purchasing facilities are bustling with activities to prepare goods for Tet sale. Ms. Nguyen Thi Van, who purchases dried squid in Son Hai commune, said: “Since the 10th lunar month until now, many new ships have been able to catch squid; compared to last year, the amount of squid purchased at this time is less, 6-7 tons/month. After purchasing, 6 workers are mobilized to classify, package, preserve and then export to China.” From now until Tet, Ms. Van will supply the market with about 10 tons of dried squid.
