When peanuts sprout, not only is their nutritional value significantly reduced, but they also produce aflatoxin, a toxin that can cause liver cancer.

Vegetables provide our bodies with a lot of energy and nutrients essential for daily activities. However, if vegetables are stored for too long, they will spoil and become foods containing deadly toxins.

Potato

Nutrition experts say that potatoes contain a lot of solanine, which is considered a type of plant antibiotic, along with a large amount of the toxic substance cyanic acid. When potatoes are stored in places with a lot of light and high temperatures, they will sprout or turn green on the outside.

At this stage, the solanine will be mostly concentrated in the sprouts and the green outer skin, making the potatoes bitter and toxic to the point of being unusable. Potato poisoning can cause abdominal pain, vomiting, and diarrhea; in more severe cases, it can lead to delirium, dilated pupils, intermittent fever, hypothermia, hallucinations, shock, and in the worst cases, death.

Sweet potato

Although not as dangerous as sprouted potatoes, sprouted sweet potatoes are also not recommended for consumption because they contain toxins. This toxin can cause vomiting, abdominal pain, dizziness, blurred vision, nausea, etc.

If you see sprouts on your sweet potatoes, cut off the sprouts and soak them in salt water before using them. Also, when you buy sweet potatoes, you should store them in a dry, cool place, away from sunlight and drafts. Hot and humid air will cause them to sprout quickly.

Peanut

When peanuts sprout, not only is their nutritional value significantly reduced, but they also produce aflatoxin, a toxin that causes liver cancer. This toxin is very stable at high temperatures, so even though the fungal spores are destroyed during cooking, the toxin is not completely eliminated.

The proper way to store peanuts is to dry them thoroughly and then store them in a cool, dry place away from sunlight. Additionally, you should avoid eating sprouted peanuts to ensure your health.

Ginger

When ginger sprouts, it produces sulfur, a substance that can severely damage the liver. Furthermore, ginger contains a toxic compound called shikimol, which seriously affects our digestive system.

When choosing ginger, you should pay attention to its color and appearance. Ginger that is bright in color, firm, and free from bruises or wilting is the best quality and ensures nutritional value for your health.
