Anh Son cassava rice paper village "sold out" near Tet

(Baonghean.vn) - From 3 a.m., the cassava rice paper making kilns in Hung Son (Anh Son) started to light up, people worked all day without any time off, especially during this pre-Tet period to have enough goods to supply to traders.

Ms. Tran Thi Thanh Thuy, one of the cassava rice paper makers, said: In recent years, consumers have enjoyed eating rustic products, made by the people themselves. The two-sided rice paper dish covered with black sesame seeds mixed with rich cassava flour is a favorite dish of many people. The cassava rice paper products here sell very well, especially near Tet, when they are always sold out.

Hung Son people make cassava rice paper from September of the previous year to March of the following year. On these days, families start work at 3am to prepare the ingredients, then grind the flour and make the rice paper to produce quality batches of rice paper, and continue working at full capacity from early morning until 10pm.

Making flavorful cassava rice paper requires meticulousness and skill. While the usual rice paper is made from rice flour, the Hung Son people's rice paper is made from delicious cassava grown by the locals, choosing the less fibrous, plump, round tubers and then grinding them finely. The mixture of cassava flour after grinding with water creates a smooth, white powder, then add a little black sesame, spices, mix and knead well. The spices are adjusted depending on the secret recipe of each craftsman.

Currently in Hung Son commune, there are more than 50 households making cassava rice paper, mainly concentrated in hamlets 6, 8, 9, with the largest number in hamlet 9 having more than 30 households making the trade. In recent years, the cassava rice paper trade has become the main source of income for many households here, especially near Tet when demand increases.
