In order for the product to be accepted by the market, the selection of raw materials is very important; therefore, the anchovies must be fresh and not preserved for a long time. When going through the steaming and drying machine, the appropriate temperature must be ensured so that the fish is both dry and ensures nutritional quality. After steaming and drying, workers transport them to the yard to dry in the sun. If the sun is strong, after 1 day they can be collected for packaging. Photo: Viet Hung |

After the fish is dried, workers put it into a separator to remove the fish heads. Every ton of fresh fish when processed for export only has about 600 kg left. Photo: Viet Hung |

After being processed and packaged, the market price of anchovies ranges from 37,000 VND to 40,000 VND/kg. Currently, anchovies are not only supplied to the domestic market but also exported to countries such as Laos, China, etc. Photo: Viet Hung |
