Preserve cold rice to prevent it from spoiling.

Wash rice thoroughly (best to wash 3 times) before cooking.

Add vinegar when cooking rice: While cooking rice, add a few drops of vinegar to the pot at a ratio of 2 ml of vinegar for 1.5 kg of rice. This ensures that when you eat it, the rice will be pure white and will not spoil for a long time.

Put rice in the refrigerator: After finishing eating, put the remaining rice in a sealed container and place it in the refrigerator. For the next meal, just take it out and steam it again.

Store in a cool place: If you want to save rice for the next meal, be careful not to let other dishes stick to the rice. Then store the rice in a cool place, cover it with a mesh basket. Do not cover it tightly in a box or leave it in the pot.

Before cooking rice, clean the rice cooker thoroughly and dry it.

Only use a separate spoon to scoop rice, do not use it haphazardly (the spoon you just used to scoop soup should not be used to scoop rice).

Cooked food

To preserve cooked food, the best way is to use a freezer or refrigerator.

In communal kitchens without refrigerators, the following folk method can be applied:

If you want to leave cooked food overnight, reheat it thoroughly and let it cool, then put it in a clean pot, cover it tightly and place it in a larger pot of clean water.

The clean water level in the large pot should be 10-15 cm from the mouth of the pot containing food to avoid water spilling onto the food. Cover the large pot tightly with a clay lid, so the food will not spoil for 5-10 hours.

Vegetables and fruits

- Mushrooms: Store for 3-5 days, do not place in plastic bags as they may turn sour and dry.

- Cauliflower, kohlrabi, broccoli, lettuce: Can be stored for a few days to a week but it is better to use immediately to get the best vitamin content.

- Mango: Can be kept for a few days but will lose its deliciousness if stored for too long.

- With fruits: Some types such as jackfruit, orange, papaya, grapefruit, sapodilla can be stored for 3-5 days.

- Hard-shelled fruits: mangosteen, durian... can be kept for over a week.

Frozen food

When buying frozen foods, you should pay attention to choose products with instructions for use. For processed or pre-processed foods stored in plastic packaging (PE or PA), there are 2 types of storage:

- Frozen foods: spring rolls, seafood,... stored at -25 to -18 degrees Celsius. Frozen foods must be processed immediately after thawing and should not be refrozen.
