In Nam Dan, the cassava starch processing industry has existed for a long time, but has been promoted in recent years along with the turmeric starch processing industry. Currently, there are about a few hundred households doing this job, concentrated in the communes of Nam Anh, Nam Thai, Van Dien, etc. |

The cassava starch processing industry usually starts from October to February of the following lunar year. Making the product requires many stages: grinding, pressing, filtering, drying, drying... Every stage must be done carefully to produce a good product. Each time processing, each household will make from 500kg to 1 ton of fresh cassava and need about 40-50 large barrels or large basins for filtering. Each batch of cassava must be filtered for about 6 days, each day stirring and changing the water many times, until the water is clear, every 5-7 days a batch is made. |

After being scooped up on bamboo trays, the starch is broken into small pieces and dried with an electric fan until it cracks evenly, then it is dried or dried. Mrs. Pham Thi Minh's family in Hamlet 8, Nam Anh Commune, processes about 30 tons of fresh cassava each year. When coming to her house during the cassava processing season, cassava starch is dried all over the house and yard. |

If it rains, it must be put in the drying oven. Every household that processes cassava starch has an electric oven. Drying cassava starch also requires technique. If dried correctly and at the right temperature, the product quality will be better, easier to dissolve, will not clump, and will taste better. |

One quintal of fresh cassava starch can be processed into about 17 - 20 kg of dry starch. The product is sold at home or imported to Vinh, Hanoi, Ho Chi Minh City at a price of about 90 thousand VND/kg. The cassava starch processing profession has created jobs for thousands of workers and brought in a considerable income for many households in Nam Dan, especially during the Lunar New Year. |
