These days, in the bustling atmosphere of welcoming Christmas, parishioners in Quy Chinh block, Nam Dan town are also stepping up production of rice vermicelli, preparing goods for the Lunar New Year.

Mr. Le Dinh Hieu (45 years old) - Owner of a new technology vermicelli production facility said: Currently, his family is one of four households with the most modern vermicelli production line in the region. This chain system includes a rice milling machine, a flour rolling machine and a vermicelli extruder, which can process several tons of rice per day. "To overcome the erratic weather conditions, when it rains for a long time and vermicelli cannot be made, I intend to build a vermicelli drying oven attached to a product packaging line. After being removed from the machine, the vermicelli is cut into 25-27cm long pieces, neatly arranged, covered with a tarp and left to ferment for 10-12 hours. In strong sunlight, vermicelli only needs 1 day to dry, in light sunlight it takes 2 days. Taking advantage of the strong sunny days, people boost production to meet the demand for goods for the Lunar New Year. Ms. Dinh Thi Loi (64 years old) - a veteran in making vermicelli in the area shared: Her family has been making vermicelli since the early 90s of the last century, and is one of the first households to buy a vermicelli production machine in the area. Currently, her family uses about 1 - 1.5 quintals of rice to produce vermicelli every day. According to Ms. Loi, every 10kg of rice can make 9 - 9.2kg of vermicelli. Photo: Huy Thu

It is known that Quy Chinh block has a long-standing vermicelli making profession and has been recognized as a craft village by the Provincial People's Committee since 2006. Currently, the products made by the people are mainly picked up by traders at home. Ms. Hoang Thi Phuong (55 years old) is tying vermicelli in her yard and shares: I stopped making vermicelli for a while, but now that Tet is approaching, many customers have called to order, so I am back to work. Quy Chinh rice vermicelli has been consumed in many places inside and outside the province. Mr. Nguyen Minh Hoai, Head of Quy Chinh Block, said: Thanks to the application of machinery and technology in production, the vermicelli making profession of the people has improved a lot. However, in order for the craft village to develop further, people need a drying system to maintain year-round production, overcoming limitations in weather conditions. Supporting capital to expand business and production for people is also an important issue.
