If cooking eel porridge, eel hotpot, eel vermicelli, shredded eel, grilled eel fillet wrapped in betel leaves...: you should choose large eels weighing over 400g/eel.
If making fried, stewed, stir-fried, chopped, stir-fried with lemongrass and chili and served with sesame rice paper: choose small fish, under 300g/fish.

Clean and gut the eel
To clean eel slime, in the past, people in the countryside often used wood ash. However, if you don't have wood ash, you can use lemon juice or rice water to clean it. You can also clean eel slime by dropping a pinch of salt into a plastic bag, the eel will wriggle and clean itself, then wash it with warm water.
Note, do not clean eel slime with vinegar because vinegar can lose the characteristic flavor of the eel.
When cutting, remember to remove all the organs. After cutting, wash again with warm water mixed with light salt, if you use plain water, the eel will have a fishy smell.
After cleaning the eel, you can marinate it with salt, pepper, turmeric powder and a little white wine. Do not use fish sauce and ginger because it does not suit the taste.
