(Baonghean.vn) - In order to prepare goods for the Lunar New Year, people of Quy Chinh parish in Nam Dan town are actively producing rice vermicelli, with many processing facilities operating day and night.

Along with the preparation for Christmas 2022, the people working in Quy Chinh parish are entering the time of year when vermicelli production is at its peak. Quy Chinh block has a long-standing vermicelli making profession and has been recognized as a craft village by the Provincial People's Committee since 2006. According to Mr. Nguyen Minh Hoai, head of Quy Chinh block, the whole block has 360 households, of which about 250 households maintain the vermicelli making profession. According to local people, vermicelli here is made from Khang Dan rice. To make vermicelli, it must go through many stages such as soaking rice, grinding, pressing dough, rolling, fermenting, kneading, drying... Recently, some households in the block have purchased modern, expensive vermicelli making machines. With these machines, rice soaked for 5-7 hours and put into the machine will produce vermicelli immediately, without going through the dough pressing stage because the system already has a drying and flour fluffing part. To make delicious vermicelli, in addition to choosing the right rice, soaking, pressing, and fermenting it properly, it must be dried in the sun. On sunny days, the vermicelli only needs to be dried in 1 day, on mild sunny days it takes 2-3 days, and on cloudy days it must be dried with an electric fan. After drying, vermicelli is bundled into small bundles and packaged for preservation. Quy Chinh's vermicelli products are consumed in many localities inside and outside the province, the current wholesale price is 17,000 VND/kg. After deducting expenses, each year the vermicelli products also bring in tens of billions of VND for local people.
