These days, households processing grilled mackerel in Nghi Hai ward, Vinh City, are actively producing to supply the market for the upcoming Tet holiday.

In Nghe An province, grilling mackerel is a traditional craft in many localities; however, it is most famous in Nghi Hai and Nghi Thuy districts (Vinh City). Grilled mackerel is not only a delicious and nutritious specialty of Nghe An but also a very popular gift during Tet (Lunar New Year). Ms. Nguyen Thi Binh, a local resident who grills mackerel in Nghi Hai ward, Vinh City, said: "The grilling process is very important and requires experience. The grill rack should be about 10-15 cm away from the charcoal; it shouldn't be too close as it will easily burn. Usually, each batch of fish takes 5-10 minutes to grill, depending on how densely the fish are arranged." (Photo: QA)

Once the grilled mackerel has cooled, it is packaged, vacuum-sealed, labeled with a barcode, and then marketed. Ms. Nguyen Thi Xuan, a grilled mackerel vendor, shared: "After Nghi Hai ward was merged into Vinh City, we in this business hope that our grilled mackerel specialty will be increasingly promoted to friends near and far, both to build a branded product for Vinh City and to support those of us in this profession with a stable income."
