In Nghe An, processing grilled mackerel is a traditional profession in many localities, however, the most famous is in Nghi Hai, Nghi Thuy (Vinh City). Grilled mackerel is not only a delicious and nutritious specialty of Nghe An but also a very popular Tet gift. After being imported from the port, the mackerel will be washed before processing. The grill is about 10-15 cm from the coal, not too close because it is easy to burn.
