The process of spreading and collecting rice paper is very hard and urgent. If the sun is strong and the rice paper starts to crackle on the drying bed, it must be quickly collected from the crispy rice paper; if it rains, the rice paper dryer has to work hard to collect the rice paper so it doesn't get wet.
